Darlene Rose Engelby was born on November 11, 1943 to Edward and Rose (Sodeman) Engelby in Mankato. She graduated from Mankato West High School and worked at the Stri-King CafÈ. During her time in Mankato, she met the love of her life, Tom Ubl, and the couple married on April 27, 1963. During their nearly 55 years of marriage, Darlene and Tom were blessed with 3 children who they raised together. While raising her family, Darlene was also found working at Veigel’s Kaiserhoff, Tropicana, Madsens, Randalls, and Hardees. After her children had grown, Darlene started an in-home daycare. She spent the next 24 years taking care of children in her daycare and saw around 75 children throughout that time. In her free time, Darlene enjoyed flower gardens, collecting dolls and Yesterdays Child figurines, completing word search books, going to kids’ events, and spending time with her friends and family. Darlene truly loved the time she was able to spend with her family, children, grandchildren, and her daycare families. She will be missed by all who know her, blessed be her memory.
