The Great White Peach

Are you one of the many enjoying Shark Week on the Discovery Channel this week? While you watch this event over the next few days, there is another Great White species I'd encourage you to check out as well - the great white peach.

White peaches (and nectarines) are very similar to the peaches you are accustomed to eating with a few small differences. The most obvious difference is the color. Rather than the darker peach color you usually see in peaches, white peaches have a white flesh hence, the name. Many people feel that white peaches tend to be sweeter than traditional peaches. The reason for this is that white peaches are less acidic, making them less tart than yellow peaches. Normally you have to allow yellow peaches to ripen. When they ripen, the acid and tartness decrease and the sweet flavor becomes more noticeable. Since white peaches have less acid to start with, you don't have to wait for their tartness to go away. This makes it a favorite for those who prefer their peaches a little more on the crunchy side.

When selecting white peaches and nectarines, look for a creamy white background with no signs of bruising. The amount of red coloring on peaches and nectarines does not indicate ripeness; it just varies by variety.

If you do not plan to eat your soft fruits the day you buy them, ripen at room temperature for one to two days. Do not refrigerate until the fruit is ripe, as this can cause it to lose flavor and become dry. Once the fruit is ripe, it can be stored in the refrigerator for a week. Remember not to store in a plastic bag as this can cause "off" flavors and decay.

White peaches and nectarines are great for eating fresh, grilling, canning, and freezing. They are typically available from late July until mid-September. So if you haven't tried white peaches, now is the time! Add them to your meals to follow MyPlate recommendations, get your kids to try new fruits and be sure to get some to enjoy while you watch the great white sharks!

White Hot Salsa

All you need:

3 white peaches or nectarines, finely chopped

1 jalapeno pepper, seeded and finely chopped

red onion, finely chopped

1 clove garlic

c. cilantro, chopped

Juice of 2 limes, about cup

Salt and pepper to taste

Dash of Chili powder to taste

All you do:

1. In a food processor, combine all ingredients except peaches, lime juice and seasoning.

2. Process to a fairly small size and place in a mixing or serving bowl. Chop peaches separately and a little more coarsely.

3. Add peaches to other ingredients along with lime juice and seasoning. Toss to combine.

4. Serve with chips or over fish and poultry.
